Given that I'm leaving for a week-long vacation on Friday, I had to start my egg challenge early. On Friday night we had shrimp devilled eggs with sprout sandwiches (alfalfa sprouts, tomatoes, and avocado with mayo and spicy mustard on wheat bread...yum!). Since I only needed 1/4 lb of shrimp, I decided to buy fresh, uncooked shrimp. That made a huge difference. The shrimp was really firm (the frozen stuff can get rather watery) and didn't have any "fishy taste." I highly recommend the shrimp deviled eggs. My sexy husband was very happy with this meal, and I would make them for company (that's the true test).
On Saturday I made the eggs in tomato onion sauce. Um...it was good...I made the tomato and onion sauce with fresh tomatoes (from giant eagle) and fresh rosemary (from my garden). The sauce was very good. The hard-cooked eggs added a lot of creamyness and a very different egg-yoke sort of flavor. My sexy husband chopped his eggs up with a spoon, and they make the sauce thick and light in color. It was good. It was.
But I probably won't make it again. I certainly wouldn't put it on my food-for-company repertoire. I have leftovers. I'm not sure who is going to eat them.
Sunday I was at my sexy husband's grandparents' house. They made pancakes and eggs for breakfast. I'm a little egged out.
I'm glad that we're going out to eat with the in-laws tonight. I don't want to have eggs again. Hopefully I can be excited about making polenta with olive oil fried onions and garlicy kale (I couldn't find any swiss chard) tomorrow. Hopefully. I might have to pick up the egg challenge when I get back from my vacation. I don't want to waste eggs poached in red wine on a day that I don't want eggs.:)
