I am so inspired about food right now. This week I made Two Sauce Weeknight Lasagna with Beans and Greens Salad and Chinese Spaghetti and Meatballs. Both meals were fantastic. My sexy husband especially loved the lasagna bowls. Oh man, they were good....
But, you know? Right now I'm inspired about breakfast and lunch. As you know, starting next month I'm going to be eating a whole grain breakfast every weekday (mostly savory, but probably not always). So I need some ideas. This is what I have so far:
Cheesy Polenta (Mmmmm)
Wild Rice and Quinoa breakfast stuffing
Wheat Berries with Sesame, soy sauce, and scallions
Whole wheat muffins
Cream of Wheat
Oatmeal
Granola
Any more ideas to help me out?
I've also been doing some thinking about my lunch. If I'm eating that much wheat/grains at breakfast, my lunch probably shouldn't be bread or cracker-based. Here are my ideas:
Hard cooked eggs
Veggies and humus
Soup (tomato, veggie, or bean)
Refried beans
Tuna/salmon packets
Carrot and Lentil Salad
Tabouli
Veggies and peanut butter
Have anything to add?

Hm. I wonder how popcorn for breakfast would be? It's a whole grain. I also think there are a LOT of different ways of making granola, including with almonds and candied ginger (borrowing from Trader Joe's) or with cashews and plenty of honey. Yum. I love granola. In terms of other grains, what about bulghur (sp?)?
For lunch ideas, I love chopped mediterranean salads, with things like bell peppers and chickpeas and lemony dressings. and olives! and feta!
I just ate dinner, and I'm making myself hungry.
The breakfast thing is funny to me, because I go to sleep many nights looking forward to what I'll eat for breakfast (which is often granola-style cereal or peanut butter toast). It's so funny to me that anyone could fall asleep without that anticipation.
