Butternut squash


This soup made me realize how butternut squash got it's name. The recipe uses the squash as a thin-ish pureed base for rice, corn and sausage. It's amazing, so buttery and warm and hearty without being thick. It's a butternut squash revelation.

I only wish I didn't take it to my sexy husband's family's house for dinner. Of course they loved it, but there were no leftovers. :(
